Gastronomy

Cantabria’s cuisine is a celebration of the sea and the mountains, offering an abundance of fresh fish, seafood, and tender meats. Local specialties such as anchovies from Santoña, cocido montañés (a hearty mountain stew), and creamy quesadas and sobaos pasiegos showcase the region’s rich culinary tradition. Every meal reflects Cantabria’s deep connection to its land and coast, combining rustic flavors with genuine hospitality.

Wines

While Cantabria is less known for large-scale wine production, its proximity to La Rioja and the Basque Country means excellent wines are always within reach. Crisp txakoli whites pair beautifully with the region’s seafood, while robust Rioja reds complement heartier inland dishes. Together, they offer a perfect balance of freshness and depth, enhancing every dining experience along the northern coast.

Accommodation

Posada La Casa del Organista

The Posada "Casa del Organista" is an eighteenth century country house, which has been carefully restored as a charming hotel. Santillana del Mar is one of the oldest villages in this region. The first building was the Colegiata, built in the XI century and one of the most important examples of Romanesque architecture in Spain. Most of the houses were built between the XIV and the XVIII centuries, all in stone, forming narrow streets that create a magical atmosphere especially at night time with their subdued lighting.

All the Bike Spain Tour staff were excellent. Nothing seemed to be too much trouble to sort out. Every interaction was punctual, helpful and friendly. I had a technical problem with my bike, which was sorted out very quickly in Llanes. We got a good flavour of the area from everyone – which everyone was clearly proud of! It’s difficult to pin down the best bits because there were so many: the scenery, the people, the food, the culture (from architecture to festivals), the service, these were all fantastic and there’s no doubt we’ll be back to this part of the world again. Thank you!

Very pleased with quality! Before this trip I had never traveled outside the continental USA so it was a pleasant adventure. I found the price to be very good with no hidden surprises. And, I have also read that tourism in certain parts of Spain has grown to the point where it is causing resentment (understandably) from residents but that was not case at all on this trip. Your staff was friendly and helpful at all times!

It’s difficult to pick a favorite experience from the trip. The cobblestones and medieval architecture in Santillana, all of the cows / horses / and sheep roadside while cycling, the stunning mountain views with vibrant greenery, the breathtaking ocean views, the oceanside paseo in Llanes, and the amazing food we had everywhere are just some of the experiences that jump into my mind as I think back on the trip and struggle to pick a favorite memory.
